  • 1 tbsp. olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 3 tbsp. tomato paste
  • 400 gr. ground turkey
  • 2-3 tbsp. Mexican seasoning
  • 1 yellow bell pepper, diced
  • 1 carrot, diced
  • 1 big sweet potato, diced (or 2 small ones)
  • 2 cups vegetable broth
  • 400 gr. crushed tomatoes
  • 400 gr. canned red kidney beans, drained
  • Toppings: fresh cilantro, lime, avocado
  1. Heat a Dutch oven to medium-high and add the olive oil.
  2. Add the onion and garlic and cook for a few minutes, until fragrant.
  3. Add the tomato paste and cook for a couple more minutes.
  4. Add the ground turkey and cook until browned.
  5. Next, add the Mexican seasoning and mix well.
  6. Add the bell pepper, carrot, sweet potato, vegetable broth, crushed tomatoes and mix well.
  7. Season with salt and pepper to taste and cook for 45 minutes.
  8. Add the kidney beans and mix well.
  9. Serve with your favorite toppings.
