Each skewer presents a combination of juicy bell peppers and sweet pineapple chunks, skillfully threaded to create an alluring and mouthwatering treat. The tangy glaze, skillfully blended from pineapple juice, honey, soy sauce, garlic, and optional Sriracha or Kimchee base, enriches every bite with a savory explosion. Ingredients
- 1 Red Bell Pepper, cut in big chunks
- 1 Green Bell Pepper, cut in big chunks
- 1 Yellow/Orange BellPepper, cut in big chunks
- 1 Red Onion, cut in big chunks
- 2 cups Pineapple, cut in big chunks
- 6 tbsp. pineapple juice
- 2 tbsp. honey
- 2 tbsp. light soy sauce
- 1 tsp. garlic, minced
- 1 tsp. Sriracha or
- Kimchee base (optional)
- Fresh herbs to serve (basil, mint, etc.)
Directions
- Mix pineapple juice, honey, light soy sauce, garlic and sriracha in a bowl.
- Place the peppers, onions and pineapple in a bowl and top with ¾ of the marinade.
- Dip 8 skewers in water to make them soft. Assemble the skewers alternating pineapples, peppers and onions.
- Heat a grill to medium-high. Grill the veggies and pineapple until golden brown on both sides, you can use the remaining marinade to add extra flavor while you are grilling.
- Serve with fresh herbs.
