Ingredients
- 1 tbsp. olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 3 tbsp. tomato paste
- 400 gr. ground turkey
- 2-3 tbsp. Mexican seasoning
- 1 yellow bell pepper, diced
- 1 carrot, diced
- 1 big sweet potato, diced (or 2 small ones)
- 2 cups vegetable broth
- 400 gr. crushed tomatoes
- 400 gr. canned red kidney beans, drained
- Toppings: fresh cilantro, lime, avocado
Directions
- Heat a Dutch oven to medium-high and add the olive oil.
- Add the onion and garlic and cook for a few minutes, until fragrant.
- Add the tomato paste and cook for a couple more minutes.
- Add the ground turkey and cook until browned.
- Next, add the Mexican seasoning and mix well.
- Add the bell pepper, carrot, sweet potato, vegetable broth, crushed tomatoes and mix well.
- Season with salt and pepper to taste and cook for 45 minutes.
- Add the kidney beans and mix well.
- Serve with your favorite toppings.
