If you’re looking for a treat that satisfies your sweet tooth without compromising on health, we’ve got a delicious recipe for you – Chocolate Covered Dates! Not only are they delicious, but they’re also perfect for your meal prep; just freeze them, and you’ve got a quick dessert ready whenever the cravings strike.
Ingredients
Chocolate and Peanut Dates
- 6 dates, pitted
- ¼ cup peanut butter
- ¼ cup dark chocolate
- 2 tbsp. crushed peanuts
White Chocolate and Pistachios Dates
- 6 dates, pitted
- ¼ cup pistachio butter
- ¼ cup white chocolate
- 2 tbsp. crushed pistachios
Directions
- Cut dates length wise, making sure not to cut all the way through (remove pits if not pitted already).
- Add approx. 1/2 tsp of nut butter into centre of each date and slightly close.
- Melt chosen flavoured chocolate chips in 30-second increments in the microwave or over a double boiler; then let it cool slightly. *Separate batches for each chocolate flavour
- Dip stuffed dates into melted chocolate – either whole date, half or drizzle (up to you!) – and place on parchment-lined baking sheet for ease.
- Finishing touch – sprinkle the crushed peanuts, chopped pistachios, sea salt, or another topping of choice on the chocolate.
- Allow them to set at room temp. or in the fridge for 15-30 mins – and enjoy!
TIP: Avoid freezer if possible to cool. The chocolate will begin to sweat once it hits room temp if you do!
